I present to you my latest hyperfixation meal…PIZZA GRILLED CHEESE!!! I would consider this to be a healthy-er grilled cheese since it doesn’t use any butter, requires only five ingredients, and provides leeway for you to make adaptations as you see fit. As an added perk, it comes together in less than ten minutes and requires no chopping.

Ingredients (for one serving)

-Two slices of white bread (bonus points if it’s sourdough; bonus BONUS points if you made it yourself)

-Mozzarella cheese (preferably the unshredded kind)

-Pasta sauce (Rao’s Calabrian Chili Pepper sauce is my current fave, but any will do)

-Olive oil

-Salt

Prep

1. Heat a tablespoon of olive oil in a pan on medium heat, and add the bottom layer of bread to the oil after a minute.

2. Pile on as much mozzarella cheese as your heart desires, and sprinkle some salt on top. Adding pepperoni or salami during this step would also be delicious.

3. Scoop out some pasta sauce into a small bowl for dipping.

4. As with any grilled cheese, flip once you hear the sizzle and repeat until golden.

5. ET VOILÀ!!!!
