classic Swedish vanilla sponge cake recipe

LET THEM EAT CAKE!!!! especially if it’s Swedish.

A few Sundays ago my momma, sister, and I hopped on a FaceTime call to bake a cake together from my mom’s tried-and-true Swedish cookbook. We all ended up making different iterations of the cake – some with fruit, others with a lemon glaze, but we all ended up with a delicious, delicate cake thanks to this simple Swedish vanilla cake recipe.

It could be considered a hybrid between both a regular cake and a pound cake because of its crumbly yet airy texture. The batter takes about 15 minutes to prep, making this a perfect recipe to use when hosting, celebrating, or even when you just want something sweet to eat. I brought the loaf to book club that night and it was a crowd-pleaser, so hold onto your hats!

Without further ado, here is the recipe for a classic Swedish vanilla cake, as it was passed along to me by my momma 😋.

Ingredients

2 eggs

1 cup of sugar (or a little less for less sweet)

1 cup of milk

50g butter (1/2 a stick)

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

Splash of vanilla extract

Steps

1. Preheat oven to 350 degrees Fahrenheit.

2. Mix eggs and sugar until fluffy and foamy.

3. Melt butter, add milk and vanilla, and bring to a quick boil in a saucepan.

4. Slowly add the milk mixture to the eggs through tempering so you don’t scramble the egg mixture.

5. Mix the flour and baking powder and gently mix it with the milk and eggs mixture. *Do not over mix as this will make the cake dense.*

6. Add parchment paper to the bottom of the buttered cake pan and add batter to the cake pan.

7. Bake at 350 for 35-40 min.
