the hyper-fixation meal that has had a grip on my cravings for the past two weeks are the buffalo cauliflower bites i found on TikTok from the creator Tonya Yancey (@tonyakisauce). the time required to prep the bites takes less than 10 minutes and it comes together beautifully in the oven after 25 minutes, making this a perfect weeknight meal option after work or healthy afternoon pick-me-up.
ingredients
-1 head of cauliflower
-flour
-water
-paprika
-garlic powder
-Frank’s RedHot Sauce
-butter
-salt & pep to taste
preparation
- preheat oven to 450 degrees Fahrenheit
- put desired amount of cauliflower for serving (i typically use half a head but divide the whole thing up so i can use the rest the next day) into a large mixing bowl
- in a smaller bowl, make a batter that consists of equal parts of flour and water, and season with paprika, garlic powder, and salt; mix until it forms a paste-like consistency
- whenever i use half a head of cauliflower i use 1/4 a cup of flour and water to make the batter, but use double (so 1/2 cup of each) when using the entire head
- add the batter to the large bowl of cauliflower and mix until each piece is coated
- add to a baking-sheet lined pan and pop in the oven for 10 minutes
- be sure to tap off any excess batter to ensure the pieces don’t get soggy while cooking in the oven!!
- take the cauliflower out of the oven, flip each piece over, and cook for another 10 minutes
- while the second side is baking, it’s time for us to make the sauce!! combine 1 tbsp of melted butter to 1/4 cup of Frank’s RedHot sauce in a small bowl
- after the battered cauliflower has baked in the oven for a total of 20 minutes, dunk each piece in the buffalo sauce (tapping off any excess) and transfer back to the baking sheet
- pop your now battered AND sauced cauliflower pieces back into the oven to bake for 15 minutes (or until desired crispiness)
- ET VOILÀ!!!!
